FAT FREE, Converted by substituting applesauce for vegetable oil
Amazing Corn Bread          
1 Cup Cornmeal  
 1/2 cup whole wheat flour (I use about 1/2 white flour)  
1 TB baking powder  
1 to 3 TB sugar depending upon taste. (I find it too sweet and use 1 TB brown sugar twin)
 1/2 tsp. Salt  
  1/3 cup, Plus about 2 TB of prepared unsweetened applesauce  
 3/4 cup skim milk (could use 1% or Soy Milk)  
2 Egg whites (I use Naturegg "Simply Egg Whites" they're fat & cholestral free)  
1    15 oz can of creamed corn  
  Preheat oven to 425 degrees f. Spray an 9 x 9 pan with pam and then lightly wipe out
  with a paper towel.   
  Mix all ingrediants, pour batter into pan and bake for 30 - 35 minutes till a toothpick
  comes out clean & dry  
  Cool & cut into square bars that are about twice as long as thick or wide.  
  To serve I always toast all sides of the bars in a toaster oven. This gives a wonderful 
  toasty coating that definitely adds to the flavour  
  Freeze very well. I wrap up two bars per person in saran wrap and thaw and toast as required
  Great accompanyment with stir frys, baked beans or any casserole in place of bread or rolls
