Mandarin Chicken            
   
1 1/2 Cups cooked rice  
4 Boneless, skinless, breast of chicken  
1/2 Cup sliced fresh mushrooms  
2 Cups orange juice  
1 Cup chicken broth  
1/2 tea spoon salt & pepper to taste  
1 15 oz Can Mandarin orange sections  
  Paprika & minced fresh parsley  
   
  Spread rice in greased shallow 3 qut baking dish  
  Top with chicken & mushrooms  
  Pour orange juice & broth over all  
  Sprinkle with salt & pepper  
  Cover & bake at 350 degrees F. for 45-50 min  
                   or until chicken juices run clear & rice is tender   
  Garnish with orange sections, paprika & parsley  
   
  Makes 4 servings.
