FAT FREE, Converted by substituting applesauce for vegetable oil
Orange Cranberry Bread          
   
 3/4 cup white flour  
 3/4 cup whole wheat flour  
 1/4 cup brown sugar twin (artificial sweetener)  
 1/4 cup sugar                                   (In the future I will try All sugar twin)  
2 tsp baking powder  
 1/2 tsp baking soda  
 1/2 tsp. Salt  
1    tsp ground cinnamon  
2    cups bran flakes  
1    cup orange juice  
1    egg white (I use Naturegg "Simply Egg Whites" they're fat & cholestral free)  
 1/4 cup unsweetened applesauce}  
 1/4 cup canola oil                       } (in future I will try ALL applesauce, no oil  
 1/2 cup raisins  
1    cup fresh or frozen cranberries  
1    Tbsp grated orange rind  
   
  Preheat oven to 350 degrees f.  
  In a large bowl, mix cereal & orange juice, let stand 2 minutes  
  Add Egg and applesauce/oil. Beat Well  
  Stir in cranberries, raisins & rind.  
  Add all the dry ingredients and stir until just combined.  
  Spray a loaf pan with pam and then lightly wipe out/spread with a paper towel  
  Pour batter into pan and bake for 55 minutes or until golden brown and a toothpick
  comes out clean & dry.  
  Cool 10 minutes before removing from pan.  
  Cool completely before slicing.  
  Store tightly wrapped in the refrigerator.  
  This freezes well.
