Southwestern Grilled Chicken & Grapefruit Salad  
   
2 Boneless, skinless, breast of chicken  
4 Packed cups (1L) shredded lettuce  
1 cup (250mL) red, green or orange sweet pepper strips, (or mixture)  
1 Grapefruit, halved crosswise and sections removed  
1 Cup (250mL) orange juice  
1 teaspoon (5 mL) olive oil  
 1/2 teaspoon (2mL) dry mustard  
 1/4 teaspoon (1mL) chili powder  
 1/8 teaspoon (.5mL) paprika  
  Dash of salt  
   
  Grill or broil chicken breasts; cool slightly. Cut into bite-size strips  
  In a bowl, toss together lettuce, pepper, chicken and grapefruit  
  In a small bowl, combine orange juice, oil, dry mustard, chilli powder, paprika & salt
  Whisk together until well blended. Pour dressing over salad; toss until well coated.
   
  Makes 2 main dish salads.
