2 C. SUGAR

1 C.  CRISCO (NOT BUTTER)

1 C. COCOA

2 TSP. SALT

2 EGGS

1 C. SOUR MILK-(1 TABLESPOON VINEGAR PLUS 1 C. MILK/LET STAND 5 MIN.)

2 TSP. SODA*

1 C. HOT WATER

2 TSP. VANILLA

 

CREAM CRISCO AND SUGAR TOGETHER

ADD EGGS AND BEAT

 

SIFT ALL DRY INGREDIENTS (EXCEPT SODA) TOGETHER

(I DON’T SIFT ANYMORE BECAUSE THE FLOUR IS PRE-SIFTED TODAY.)

 

ADD MILK AND VANILLA

*PUT SODA IN HOT WATER AND ADD. (STIR SODA IN WATER AND ADD)

 

IF YOU MAKE HALF OF THIS RECIPE, IT TURNS OUT APPROX. 32 CAKES OR ACTUALLY 18 WHOOPIE PIES.  THIS DEPENDS HOW MUCH YOU DROP FROM A SPOON.

 

DROP BY SPOONFUL ON A COOKIE SHEET.  (I USE A TSP.)

BAKE 400 DEGREES 8 MINUTES.  (IT’S BEST TO GET THEM OUT OF THE OVEN BEFORE THEY CRACK ON TOP.)

 

FILLING

 

4 C. 10X SUGAR  (NO SUBSTITUTE)

¾ C. CRISCO (NOT BUTTER CRISCO, WHITE)

1 EGG WHITE

VANILLA & SALT—DASH

MILK TO MOISTEN (NOT QUITE ¼ CUP) USE OWN JUDGMENT TO TEXTURE.

 

BEAT TOGETHER WITH MIXER UNTIL SMOOTH!

 

PUT A TSP. OF FILLING ON A CAKE AND ANOTHER CAKE ON TOP.  ENJOY!
